As part of the ongoing Bee Keeper series, each edition represents a new interpretation of honey, fruit, and spices. The fifteenth edition elevates this concept to a particularly complex yet elegant level, featuring a carefully balanced combination of Williams pear, white guava, lemon, cinnamon, and acacia honey.

Visually, the beer is inviting and vibrant. In the glass, The Bee Keeper Vol. 15 is usually slightly to moderately hazy, with a warm, golden-yellow color and a fine, bright head. The nose immediately reveals a complex aroma profile that is simultaneously fruity, fresh, and spicy. The juicy sweetness of the Williams pear takes center stage, complemented by the exotic, gently floral notes of the white guava. Fresh lemon zest adds a lively acidity, while the acacia honey lends a delicate, floral depth. A hint of cinnamon rounds off the bouquet and provides a subtle, warm spice that gives the beer character and structure.

On the palate, the precise harmony of these ingredients becomes evident. The fruitiness is clear and juicy, without tasting artificial. Williams pear and guava provide a soft, rounded sweetness, elegantly balanced by the fresh lemon. The acacia honey doesn't impart a dominant honey sweetness, but rather a subtle, natural depth and a smooth mouthfeel. The cinnamon is deliberately understated, unfolding more in the background – lending the beer a gentle spiciness and a slightly warming note without masking its freshness.

The mouthfeel is pleasantly soft and rounded, with a lively yet well-integrated acidity that makes the beer very drinkable. The finish leaves an elegant blend of fruit, honey, and subtle spice that lingers and makes you want another sip. What's particularly interesting is how the aromas change with rising temperature: the honey notes become more intense, while cinnamon and guava become more prominent, adding further depth to the beer.

The Bee Keeper Vol. 15 is not a loud, extreme beer, but a multifaceted, carefully crafted experience. It is perfect for mindful moments of enjoyment, as an accompaniment to light desserts, mild cheeses, or simply as a standalone tasting beer. With this fifteenth edition, Tank Busters Co. impressively demonstrates just how versatile and elegant fruit- and honey-based beers can be – complex, balanced, and full of personality.
