Nessun Dorma is our Vieille Saison and takes its name from the famous tenor romance from Puccini's Turandot: The waiting for the unknown prince, who longs for daybreak to win the heart of the Ice Princess, seems to us a fascinating metaphor for the time required to mature and refine this product.
The term Vieille (literally: old/antique) refers to Saison, a beer historically brewed in Hainaut (the French-speaking province of Wallonia in southern Belgium). Farmers brewed this beer at the end of winter/spring and drank it during the summer to fortify themselves during long working days.
The poorly controlled production processes of that time, as well as the maturation before consumption of the beer, led to wild fermentations (contamination by wild yeasts and bacteria).
The wort, produced with a high proportion of unmalted wheat and oats, is finished with a fine hopping of noble hops.
After fermentation in steel by Saccharomyces, the beer matures for about a year in tonneaux and barriques (which previously contained wine), becoming contaminated with Brettanomyces and lactic acid bacteria originating from the barrel room itself.
At the end of the maturation process, we mix the contents of all the barrels with a small portion of the same young Nessun Dorma, which has only recently entered the cellar, to add freshness, elegance and body to the beer's character.
The final blend yields a rustic drink with fine bubbles and a pronounced acidity. Notes of citrus, spices, and white fruits are softened by floral hints and the complexity of the wood.
Nessun Dorma is a refreshing beer with a wild depth that will surely enjoy maturing further in your cellar.
