We collect all our beers directly from regional breweries. Short and direct routes are good for the beer and the environment.
We also receive beer deliveries by mail. We reuse the cardboard boxes provided by the breweries to send you the beer. So don't be surprised if you receive a used, not new, box.
To save resources, especially for our shipping partners, we pack your order in the smallest possible packaging size.
The idea behind Ca' del Brado is to create, ferment, and age beer-style wines using unconventional/wild yeasts, bacteria, and aging in wooden barrels with varying characteristics. We believe that producing this type of beer—with its ancient tradition and ample opportunity for experimentation—is a natural extension of Italian craftsmanship, rich in typical products, connected to the territory, and deeply rooted in the world of wine. The use of wood (with its extensive network and established practice of aging wood) and the vast world of winemaking (which transforms barrels into breeding grounds for diverse fermentation environments) form a rich, fascinating, and unique heritage that we are proud to embrace as the foundation of our work.
Ca' del Brado creates its own beers by meticulously studying and crafting recipes, carefully selecting raw materials and fermentation processes (propagation and inoculation of classic and wild yeasts, and the promotion of wild yeasts and bacteria). Extended aging and maturation in various types of casks transform our brewery into a laboratory akin to a wine cellar. Our name, Ca' del Brado, embodies the characteristics of the project and the manifesto of our production intentions. CA' is a designation associated with the territory; it is the house where a diverse flora of yeasts and bacteria can transform the raw material (the must) into beers with a unique and distinctive character. BRADO intentionally evokes two different meanings: Bradùs, a Greek word for slow, signifies that our products undergo maturation and rejuvenation, which takes time (in some cases even years) and is therefore situated within the longest production cycles in the world of brewing; Stato Brado in Italian stands for wild state, as with the help of wild yeasts and bacteria / the fermenting environment of the wood, there will always be a free and not entirely controllable element, as with many other fascinating processes that occur in nature.
We believe that Ca' del Brado embodies a deep respect, study and rediscovery of European brewing tradition, but with a modern and innovative approach. It is our intention to continue dedicating ourselves to spreading brewing culture, telling what lies behind the scenes of each individual product, improving the production processes, stories, reflections, alchemy and the artisanal approach that characterizes the project. We have breathed life into our idea; we have invested time, care, and passion.
