Wheat beer

Wheat beer (Weizenbier, Weizen) is a top-fermented beer that must be made with at least 50% wheat malt. Wheat beers are distinguished by their color (from light to dark), but primarily by their brewing method. Originally, there was only the unfiltered, naturally cloudy "Hefeweizen," traditionally produced through bottle fermentation, in which the yeast settles visibly at the bottom of the bottle. In "Kristallweizen," the yeast and suspended solids are filtered out. The original gravity is between 11.5% and 13.5%, and the alcohol content is between 4.5% and 5.5%. Depending on the malt used, wheat beer ranges in color from light yellow to dark brown. The darker varieties generally have a higher alcohol content.
